Candy Buffets are a huge trend at weddings right now. They won't really work in the Caribbean due to the hot temps and high humidity. However, you could still implement a sweet element into your event in the form of custom wrapped Lifesavers candy... I think they are one of the hardier candies and will put up a good fight against the elements. I spotted these at Project Wedding in this slideshow of favors.
